Saffron Rice Pilaf
Ingredients:
120g long grain rice
2 tbsp. oil
1 big yellow onion, diced
30g slivered almonds
30g dark raisins
1 tsp saffron
Salt & pepper to taste
Method:
1. Wash and drain rice, set ready in rice cooker.
2. Fry almond till golden brown, drain and set aside.
3. Fry diced onion till golden brown, transfer half of the onion into rice cooker. Reserve half for cooked rice.
4. Add in saffron into the onion and rice mixture, season with salt and pepper. Cook rice as per the cooking instruction.
5. Once cooked, stir in almond, raisins and onion, mix well with the rice.
Beef Stroganoff
Ingredients:
300g Beef Chuck Tender, cut into strips
1 tbsp. of Paprika
1/2 tbsp. coarse chili powder
Salt & Pepper
Sauce Stroganoff
30g butter
30ml Brandy
1 yellow onion, diced
200g white button mushrooms, quartered
1 tbsp. Paprika
30ml white wine vinegar
130ml beef stocks
130ml cooking cream
Salt & pepper to taste
Pinch of dried oregano
Method:
1. Marinade beef for at least 2 hours.
2. Pan fry beef with butter for about 3-4 min, drained and set aside.
3. In the same frying pan, splash in Brandy. Add in chopped onion, cook till translucent.
4. Stir in mushrooms, add in paprika.
5. Deglaze with white wine vinegar. Add in brown stocks and reduce the liquid by half.
6. Stir in cooking cream, continue to cook to achieve the coating consistency. Add in the beef. Season and serve.
