200g fresh lychee, peeled
150g water chestnut, wash and skinned
80g potato, skinned and cut into large chunk
5 red dates, pitted
10g of ginger, sliced
Salt to taste
1. Blanch the spareribs in hot water to remove scum. Discard the water, drain and set the ribs aside.
2. Bring 1.5L of water to rapid boil. Add in all ingredients (except for wolfberries) and boil for 15 minutes.
3. Cover the pot and turn down the heat. Simmer for 1.5 hrs.
4. Add in wolfberries, simmer for another 30 minutes. Season with salt and serve.
