200g shortbread biscuit or digestive biscuit
60g butter, melt it
450g Philadelphia cream cheese
300g whipping cream
400g fresh durian flesh
1 tbsp. gelatin
3 tbsp. water
Preheat oven at 200c.
Crush biscuits and mix well with the melted butter.
Press them into an 8'' springform tin and bake for 5-8 mins at 200c. Chill the biscuit base once cool.
Sprinkle gelatin into water. Allow it to swell. Bring to melt over a pot of simmering water. Stir well. Off heat and let the bowl stand on the hot water.
In a mixer, whisk whipping cream till thicken. Set aside.
In the same mixer, cream the cheese with sugar. Beat on high speed.
Beat in the gelatin. Add in the durian fresh and mix them well.
Fold in the whipped cream.
Pour in the mixture into the biscuit base. Bring to chill for at least 4 hours.
Top with your favorite topping and serve chill.
