Rosy Peach Gum Snow Fungus Dessert

Cooking Time: 1.5 hrs.

Ingredients: 25g snow fungus, soaked

30g red dates, pitted

3 honey dates

6-8 dried rose bud (small)

20g goji berries

25g peach gum, soaked overnight

1 tbsp. brown sugar (adjust according to personal liking)

30g lily bulb

1.5L water


Method: 1. Soak peach gum overnight, remove impurities. Rinse well and discard water.

2. Soak snow fungus for 15 minutes until soft. Trim off the tough yellowish part at the bottom of the snow fungus. Tear them apart.

3. Bring water to boil, add in snow fungus, red dates and honey dates. Boil for an hour on slow heat.

4. Add in peach gum, rose bud, lily bulb and goji berries. Simmer for another 30 mins.

5. Serve hot or chilled.
